
At Carmine’s we appreciate the many exciting new trends in dining that constantly sweep our country. We choose not to follow these trends, but to look toward neighborhoods of Italian Americans where recipes developed through generations and a Sunday meal was shared by the family. To make our food special, we seek out the finest ingredients we can find. Often these are from Italy or from our Colorado neighbors.
- We order fish that is still swimming from the San Luis Valley.
- We source olive oil, salami and cheese from Italy.
- We buy wheels of cheese that are ground and hand blended before it is placed on the table to sprinkle on the pasta.
- We work with a small local produce company to find the freshest and closest available ingredients.
- Breads and desserts are baked fresh each day.
Carmine’s people make a difference.
It is typical for employees of Carmine’s on Penn to stay far beyond the industry norm. Our length of employment ranges back to the first day we opened for business in 1994 and five or more years of tenure is not unusual. Our cooks bring continuity, our servers are caring and our managers strive for constant improvement. We share a family meal together at the end of each service day. We don’t use traditional menus, rather servers are charged with describing any and all offerings from our chalkboard and coaching guests on portion and flavor.
Wine, Beer, and Spirits
Beverages are chosen to match our food with an emphasis on quality and value. All wines are selected from the vast array of Italian producers and designed to enjoy with food. We look for wines that are familiar and classic and for others that are unique and fun to experience the wide variety available in Italy. As with our food, we are here to help guests find their way through often confusing choices of wine. Beer and spirits are all of premium quality and we use fine glassware to enhance the quality of each product. We keep our selections limited and focused. Our servers taste and study wine in particular to assist guests with often unfamiliar choices.
